  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • ¼ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • ¼ cup fresh parsley, chopped
  • 1 lemon, juiced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and red onion.
  2. Add cilantro and parsley.
  3. In a small bowl, whisk together lemon juice, lime juice, olive oil, salt, and pepper.
  4. Pour dressing over the vegetables and toss to coat.
  5. Serve immediately or refrigerate for later.
