  • ¼ cup lemon juice
  • ¼ cup maple syrup
  • 1 teaspoon lemon zest
  • ½ teaspoon vanilla extract

Instructions 

  1. Chill the coconut cream in the fridge overnight.
  2. In a bowl, whisk the chilled coconut cream until it becomes fluffy.
  3. Add lemon juice, maple syrup, lemon zest, and vanilla extract.
  4. Continue to whisk until well combined.
  5. Spoon the mixture into serving glasses.
  6. Chill in the fridge for at least 1 hour before serving.
