Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 1 tablespoon Poppy seeds
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 cup Almond milk
  • 0.5 cup Vegetable oil
  • 2 tablespoon Lemon juice
  • 1 tablespoon Lemon zest
  • 1 teaspoon Vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease your baking pan.
  2. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  3. In another bowl, mix the almond milk, vegetable oil, lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared baking pan. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
