- 1 cup all-purpose flour
- ½ cup sugar
- ¼ cup coconut oil, melted
- 2 tablespoon almond milk
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 tablespoon poppy seeds
- ½ teaspoon baking powder
- ¼ teaspoon salt
Preheat oven to 350°F (175°C).
In a bowl, mix flour, sugar, baking powder, salt, and poppy seeds.
Add melted coconut oil, almond milk, lemon zest, and lemon juice. Mix until combined.
Scoop dough onto a baking sheet.
Bake for 12 minutes or until edges are golden.
