Cake Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup almond milk
- ½ cup vegetable oil
- ¼ cup lemon juice
- 2 tablespoon lemon zest
- 1 tablespoon poppy seeds
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In another bowl, mix almond milk, vegetable oil, lemon juice, lemon zest, and vanilla extract.
Combine wet and dry ingredients, then fold in poppy seeds.
Pour batter into the prepared pan and bake for 45 minutes or until a toothpick comes out clean.
Let the cake cool before serving.
