- 1 lb carrots peeled and cut into sticks
- 2 tablespoon olive oil
- 1 lemon zested and juiced
- 1 teaspoon salt
- 0.5 teaspoon black pepper freshly ground
Preheat your oven to 400°F (200°C).
In a mixing bowl, toss the carrot sticks with olive oil, lemon zest, lemon juice, salt, and pepper.
Spread the carrots out on a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized.
