Main Ingredients

  • 2 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup vegan butter, softened
  • 1 cup granulated sugar
  • 0.25 cup unsweetened applesauce
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In another bowl, beat vegan butter and sugar until creamy. Add applesauce, lemon zest, lemon juice, and vanilla extract. Mix well.
  4. Gradually add dry ingredients to wet ingredients, mixing until combined.
  5. Scoop dough onto prepared baking sheet, spacing cookies about 2 inches apart.
  6. Bake for 10 minutes or until edges are lightly golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
