Ingredients 

Main Ingredients

  • 1 cup Rice
  • 1 cup Coconut Milk
  • 1 stalk Lemongrass finely chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Olive Oil
  • 200 grams Vegan Chicken sliced
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt to taste

Instructions 

  1. 1. Cook the rice according to package instructions.
  2. 2. In a pan, heat the olive oil over medium heat. Add the garlic and lemongrass, and sauté until fragrant.
  3. 3. Add the vegan chicken slices and cook until browned.
  4. 4. Pour in the coconut milk, vegetable broth, and soy sauce. Bring to a simmer.
  5. 5. Add the cooked rice to the pan and mix well. Season with salt to taste.
  6. 6. Serve hot and enjoy!
