Ingredients 

Main Ingredients

  • 1 block Tofu firm, cubed
  • 2 stalks Lemongrass sliced
  • 1 tablespoon Olive Oil
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • 1 tablespoon Soy Sauce
  • 1 inch Ginger sliced
  • 2 cloves Garlic minced
  • 1 tablespoon Lime Juice
  • to taste Salt
  • to taste Pepper
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add lemongrass, ginger, and garlic. Sauté for 2-3 minutes.
  3. 3. Pour in vegetable broth and bring to a boil.
  4. 4. Add tofu, coconut milk, and soy sauce. Simmer for 20 minutes.
  5. 5. Stir in lime juice, salt, and pepper. Cook for another 5 minutes.
  6. 6. Serve hot, garnished with chopped cilantro.
