Instructions
1. Heat olive oil in a pot over medium heat.
2. Add lemongrass, ginger, and garlic. Sauté for 2-3 minutes.
3. Pour in vegetable broth and bring to a boil.
4. Add tofu, coconut milk, and soy sauce. Simmer for 20 minutes.
5. Stir in lime juice, salt, and pepper. Cook for another 5 minutes.
6. Serve hot, garnished with chopped cilantro.
