Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Sweet Potato peeled and diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste
  • 2 tablespoon Olive Oil
  • 1 cup Diced Tomatoes canned
  • 2 cups Kale chopped

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. 3. Add diced sweet potato, lentils, cumin, paprika, salt, and black pepper. Stir well.
  4. 4. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 30 minutes or until lentils and sweet potatoes are tender.
  6. 6. Stir in chopped kale and cook for an additional 5 minutes.
  7. 7. Adjust seasoning if needed. Serve hot.
