Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add carrots, bell pepper, and zucchini, cook for 5 minutes.
  4. Stir in lentils, diced tomatoes, and vegetable broth.
  5. Add cumin, paprika, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until lentils are tender.
