Ingredients 

Main Ingredients

  • 4 bell peppers
  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • Fresh parsley for garnish

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook lentils according to package instructions.
  3. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  4. Add cooked lentils, diced tomatoes, cumin, paprika, salt, and pepper. Cook for 10 minutes.
  5. Cut the tops off the bell peppers and remove seeds. Stuff with lentil mixture.
  6. Place stuffed peppers in a baking dish and bake for 20 minutes.
  7. Garnish with fresh parsley before serving.
