Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, cumin, and paprika. Cook for another minute.
Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
Reduce heat to low, cover, and simmer for 25-30 minutes, until lentils are tender.
Season with salt and black pepper to taste. Serve warm.
