Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, cumin, and paprika. Cook for another minute.
  4. Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 25-30 minutes, until lentils are tender.
  6. Season with salt and black pepper to taste. Serve warm.
