Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed and drained
  • 2 cups Mushrooms sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Diced Tomatoes canned
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper or to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of vegetable broth or oil, then add the chopped onion and minced garlic. Sauté until the onion is translucent.
  2. 2. Add the sliced mushrooms and cook until they release their moisture and start to brown.
  3. 3. Stir in the lentils, vegetable broth, diced tomatoes, thyme, and rosemary. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
  4. 4. Season with salt and black pepper to taste. Serve hot.
