Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 bell peppers, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • 2 cups vegetable broth

Instructions 

  1. Rinse the lentils under cold water.
  2. Heat olive oil in a pot over medium heat. Add onions and garlic, sauté until soft.
  3. Add diced bell peppers and cook for another 5 minutes.
  4. Stir in cumin and paprika.
  5. Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  6. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
  7. Season with salt and pepper to taste.
