Instructions
Rinse the lentils under cold water.
Heat olive oil in a pot over medium heat. Add onions and garlic, sauté until soft.
Add diced bell peppers and cook for another 5 minutes.
Stir in cumin and paprika.
Add lentils, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
Season with salt and pepper to taste.
