Ingredients 

Main Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Rinse lentils and set aside.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion, garlic, carrot, and celery. Sauté until soft.
  4. Add cumin and paprika. Stir for a minute.
  5. Add lentils, diced tomatoes, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Season with salt and pepper to taste.
