Instructions
Rinse lentils and set aside.
Heat olive oil in a pot over medium heat.
Add onion, garlic, carrot, and celery. Sauté until soft.
Add cumin and paprika. Stir for a minute.
Add lentils, diced tomatoes, and vegetable broth.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste.
