Lentil Rice and Veggie Bake Recipe
A hearty and nutritious vegan bake with lentils, rice, and veggies.

Main Ingredients
- 1 cup Lentils rinsed and drained
- 1 cup Rice uncooked
- 2 cups Vegetable broth
- 1 cup Carrots diced
- 1 cup Peas
- 1 cup Corn
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 tablespoon Olive oil
Preheat your oven to 375°F (190°C).
In a saucepan, cook the lentils in vegetable broth until tender, about 20 minutes.
In a mixing bowl, combine cooked lentils, uncooked rice, carrots, peas, corn, salt, and pepper.
Transfer the mixture to a baking dish and drizzle with olive oil.
Cover with foil and bake for 45 minutes. Remove the foil and bake for an additional 10 minutes to brown the top.
Let it cool for a few minutes before serving.
