Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 2 carrots Carrots chopped
  • 2 stalks Celery chopped
  • 1 can Diced tomatoes 14 oz
  • 4 cups Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper or to taste

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of vegetable broth or oil.
  2. 2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. 3. Add the rinsed lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper. Stir to combine.
  4. 4. Bring to a boil, then reduce heat and simmer for about 30-35 minutes, or until lentils are tender.
  5. 5. Adjust seasoning if needed. Serve hot.
