Lentil Soup Recipe
A hearty and nutritious vegan lentil soup.

Main Ingredients
- 1 cup Lentils rinsed
- 1 large Onion chopped
- 2 cloves Garlic minced
- 2 carrots Carrots chopped
- 2 stalks Celery chopped
- 1 can Diced tomatoes 14 oz
- 4 cups Vegetable broth
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper or to taste
1. Heat a large pot over medium heat. Add a splash of vegetable broth or oil.
2. Add the chopped onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.
3. Add the rinsed lentils, diced tomatoes, vegetable broth, cumin, paprika, salt, and black pepper. Stir to combine.
4. Bring to a boil, then reduce heat and simmer for about 30-35 minutes, or until lentils are tender.
5. Adjust seasoning if needed. Serve hot.
