Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Carrots diced
  • 6 cups Vegetable Broth
  • 2 cups Spinach fresh
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper ground

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic. Sauté until onion is translucent.
  3. Add diced carrots and cook for another 5 minutes.
  4. Add rinsed lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 30 minutes, or until lentils are tender.
  6. Stir in fresh spinach, salt, and black pepper. Cook for another 5 minutes.
  7. Serve hot.
