Lentil Spinach Soup Recipe
A hearty and healthy vegan soup made with lentils and spinach.

Main Ingredients
- 1 cup Lentils rinsed
- 1 tablespoon Olive Oil
- 1 Onion chopped
- 2 cloves Garlic minced
- 1 cup Carrots diced
- 6 cups Vegetable Broth
- 2 cups Spinach fresh
- 1 teaspoon Salt or to taste
- ½ teaspoon Black Pepper ground
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until onion is translucent.
Add diced carrots and cook for another 5 minutes.
Add rinsed lentils and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30 minutes, or until lentils are tender.
Stir in fresh spinach, salt, and black pepper. Cook for another 5 minutes.
Serve hot.
