Ingredients 

Main Ingredients

  • 1 cup lentils
  • 2 cups spinach, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Sauté until softened.
  3. Add cumin and paprika. Stir well.
  4. Add lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add spinach, salt, and pepper. Cook for another 5 minutes.
  7. Serve hot.
