Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 medium Sweet Potatoes peeled and diced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 1 can Coconut Milk 400ml
  • 2 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 tablespoon Olive Oil

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic, curry powder, ground cumin, and ground turmeric. Cook for another 2 minutes, stirring frequently.
  4. Add the diced sweet potatoes, lentils, vegetable broth, and coconut milk. Bring to a boil.
  5. Reduce the heat to low and let it simmer for about 20-25 minutes, or until the lentils and sweet potatoes are tender.
  6. Season with salt and black pepper to taste.
  7. Serve hot with rice or naan bread.
