Lentil Sweet Potato Curry
A hearty and flavorful vegan curry made with lentils and sweet potatoes.

Main Ingredients
- 1 cup Lentils rinsed
- 2 medium Sweet Potatoes peeled and diced
- 1 large Onion chopped
- 3 cloves Garlic minced
- 1 tablespoon Curry Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Turmeric
- 1 can Coconut Milk 400ml
- 2 cups Vegetable Broth
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
- 1 tablespoon Olive Oil
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic, curry powder, ground cumin, and ground turmeric. Cook for another 2 minutes, stirring frequently.
Add the diced sweet potatoes, lentils, vegetable broth, and coconut milk. Bring to a boil.
Reduce the heat to low and let it simmer for about 20-25 minutes, or until the lentils and sweet potatoes are tender.
Season with salt and black pepper to taste.
Serve hot with rice or naan bread.
