Ingredients 

Main Ingredients

  • 1 cup dry lentils rinsed and drained
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup vegetable broth
  • 8 taco shells
  • 1 cup lettuce shredded
  • 1 cup tomatoes diced
  • 1 cup avocado sliced

Instructions 

  1. 1. Cook lentils according to package instructions.
  2. 2. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent.
  3. 3. Add minced garlic, ground cumin, and chili powder. Cook for another minute.
  4. 4. Add cooked lentils and vegetable broth to the skillet. Simmer until the mixture thickens.
  5. 5. Spoon lentil mixture into taco shells. Top with shredded lettuce, diced tomatoes, and sliced avocado.
