Lentil Vegetable Stew
A hearty and nutritious vegan stew made with lentils and vegetables.

Main Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Rinse lentils and set aside.
In a pot, sauté onion, carrots, and celery until softened.
Add garlic and cook for another minute.
Stir in lentils, tomatoes, broth, thyme, and rosemary.
Bring to a boil, then simmer for 30-35 minutes until lentils are tender.
Season with salt and pepper.
