Lentil Veggie Stew Recipe
A hearty and delicious vegan lentil veggie stew.

Main Ingredients
- 1 cup Lentils rinsed
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 cups Vegetable Broth
- 2 cups Diced Tomatoes canned
- 1 cup Carrots sliced
- 1 cup Celery sliced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. Heat a large pot over medium heat. Add a splash of vegetable broth and sauté the onion and garlic until softened.
2. Add the carrots and celery, and cook for another 5 minutes.
3. Stir in the lentils, vegetable broth, diced tomatoes, cumin, paprika, salt, and black pepper.
4. Bring to a boil, then reduce the heat and let it simmer for about 30-35 minutes, or until the lentils are tender.
5. Adjust seasoning if needed and serve hot.
