Main Ingredients
- 1 head Romaine Lettuce separated into leaves
- 1 cup Chickpeas cooked and mashed
- 1 cup Diced Tomatoes
- 1 cup Cucumber diced
- 1 tablespoon Olive Oil
- 1 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- 1 teaspoon Black Pepper to taste
1. In a mixing bowl, combine mashed chickpeas, diced tomatoes, and cucumber.
2. Add olive oil, lemon juice, salt, and black pepper. Mix well.
3. Spoon the mixture into the lettuce leaves.
4. Serve immediately and enjoy!
