Ingredients 

Cookie Dough

  • 2 cups All-purpose flour
  • 1 cup Ground almonds
  • ½ cup Vegan butter softened
  • ½ cup Sugar
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Salt

Filling

  • ½ cup Raspberry jam
  • 1 tablespoon Powdered sugar for dusting

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, ground almonds, vegan butter, sugar, vanilla extract, and salt. Mix until a dough forms.
  3. Roll out the dough on a floured surface to about ¼ inch thickness. Use a cookie cutter to cut out shapes.
  4. Place cookies on a baking sheet and bake for 10-12 minutes or until edges are golden brown. Let cool.
  5. Spread raspberry jam on half of the cookies and top with the remaining cookies to form sandwiches.
  6. Dust with powdered sugar before serving.
