  • 2 cups hearts of palm chopped
  • 1 cup celery diced
  • 0.5 cup red onion finely chopped
  • 0.25 cup vegan mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Fresh dill for garnish (optional)

Instructions 

  1. Combine hearts of palm, celery, and red onion in a bowl.
  2. In a separate bowl, mix vegan mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the chopped vegetables and mix well.
  4. Garnish with fresh dill if desired.
