Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 1 cup Bell Pepper, chopped
  • 1 cup Celery, chopped
  • 3 cloves Garlic, minced
  • 1 cup Okra, sliced
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Vegetable Broth
  • 1 cup Cooked Rice
  • 2 teaspoon Cajun Seasoning
  • 1 teaspoon Thyme dried
  • 2 pcs Bay Leaves
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in sliced okra, diced tomatoes, and vegetable broth.
  5. Add cooked rice, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  6. Reduce heat and simmer for 30 minutes. Season with salt and pepper to taste.
  7. Remove bay leaves before serving. Enjoy your vegan Louisiana gumbo!
