Louisiana Gumbo Recipe
A hearty and flavorful vegan gumbo inspired by Louisiana cuisine.

Main Ingredients
- 2 tablespoon Olive Oil
- 1 cup Onion, chopped
- 1 cup Bell Pepper, chopped
- 1 cup Celery, chopped
- 3 cloves Garlic, minced
- 1 cup Okra, sliced
- 1 can Diced Tomatoes (14.5 oz)
- 4 cups Vegetable Broth
- 1 cup Cooked Rice
- 2 teaspoon Cajun Seasoning
- 1 teaspoon Thyme dried
- 2 pcs Bay Leaves
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion, bell pepper, and celery. Cook until softened, about 5 minutes.
Add minced garlic and cook for another minute.
Stir in sliced okra, diced tomatoes, and vegetable broth.
Add cooked rice, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
Reduce heat and simmer for 30 minutes. Season with salt and pepper to taste.
Remove bay leaves before serving. Enjoy your vegan Louisiana gumbo!
