Main Ingredients
- 2 cups macaroni uncooked
- 1 cup cashews soaked in water for 4 hours
- 2 cups unsweetened almond milk
- ¼ cup nutritional yeast
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt to taste
- ½ teaspoon turmeric for color
Cook the macaroni according to package instructions. Drain and set aside.
In a blender, combine soaked cashews, almond milk, nutritional yeast, lemon juice, garlic powder, onion powder, salt, and turmeric. Blend until smooth.
Pour the sauce into a saucepan and cook over medium heat until it thickens, stirring constantly.
Mix the cooked macaroni with the sauce. Serve warm.
