Ingredients 

Main Ingredients

  • 2 cups macaroni uncooked
  • 1 cup vegan mayonnaise
  • 1 cup celery chopped
  • 1 cup carrots shredded
  • 1 cup red bell pepper chopped
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • to taste salt
  • to taste black pepper

Instructions 

  1. Cook the macaroni according to package instructions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooked macaroni, vegan mayonnaise, celery, carrots, red bell pepper, apple cider vinegar, and sugar.
  3. Season with salt and black pepper to taste. Mix well.
  4. Chill in the refrigerator for at least 1 hour before serving.
