- 1 cup Black Beans rinsed and drained
- 1 cup Mango diced
- 1 cup Red Bell Pepper diced
- ¼ cup Red Onion finely chopped
- ¼ cup Cilantro chopped
- 1 unit Lime juiced
- 1 tablespoon Olive Oil
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
1. In a large mixing bowl, combine black beans, mango, red bell pepper, red onion, and cilantro.
2. In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately or refrigerate for later.
