  • 1 ripe mango, diced
  • 1 can black beans, drained and rinsed
  • ½ red onion, finely chopped
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • 8 small corn tortillas

Instructions 

  1. In a bowl, combine mango, black beans, red onion, bell pepper, cilantro, and lime juice. Season with salt and pepper.
  2. Warm tortillas in a pan over medium heat.
  3. Fill each tortilla with the mango-black bean mixture and top with avocado slices.
  4. Serve immediately.
