Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cup coconut oil, melted

Filling

  • 2 cups soaked cashews
  • 1 cup coconut cream
  • 0.5 cup maple syrup
  • 0.25 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1.5 cups mango puree

Instructions 

  1. Blend graham cracker crumbs and melted coconut oil. Press into a springform pan.
  2. Blend soaked cashews, coconut cream, maple syrup, lemon juice, and vanilla extract until smooth.
  3. Fold in mango puree.
  4. Pour mixture over crust. Chill for at least 4 hours.
