Ingredients 

Crust

  • 1 cup Almond Flour
  • 2 tablespoon Coconut Oil melted
  • 2 tablespoon Maple Syrup

Filling

  • 2 cups Cashews soaked overnight
  • 1 cup Coconut Cream
  • 1 cup Mango Puree
  • ¼ cup Maple Syrup
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Vanilla Extract

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, and maple syrup. Mix well.
  3. Press the mixture into the bottom of a baking pan to form the crust. Bake for 10 minutes, then let it cool.
  4. In a blender, combine soaked cashews, coconut cream, mango puree, maple syrup, lemon juice, and vanilla extract. Blend until smooth.
  5. Pour the filling over the cooled crust and spread evenly.
  6. Bake for 20 minutes, then let it cool completely before slicing into bars.
