Mango Coconut Cheesecake Parfaits

- 2 cups Mango, diced
- 1 cup Coconut cream
- 1 cup Vegan cream cheese
- ¼ cup Maple syrup
- 1 teaspoon Vanilla extract
- 1 cup Granola
1. Blend the mango until smooth and set aside.
2. In a mixing bowl, combine coconut cream, vegan cream cheese, maple syrup, and vanilla extract. Mix until smooth.
3. In parfait glasses, layer granola, coconut cheesecake mixture, and mango puree. Repeat layers as desired.
4. Chill in the refrigerator for at least 1 hour before serving.
