Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 cup Mango, diced
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tablespoon Curry Powder
  • 1 teaspoon Salt
  • 1 cup Chickpeas, cooked
  • 1 cup Spinach, fresh
  • 1 tablespoon Lime Juice

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and ginger, cook for another 2 minutes.
  4. Add the diced mango, coconut milk, vegetable broth, curry powder, and salt. Stir well.
  5. Bring to a simmer and cook for 10 minutes.
  6. Add the cooked chickpeas and fresh spinach. Cook until the spinach is wilted, about 3 minutes.
  7. Stir in the lime juice and serve hot.
