Ingredients 

Main Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1 lb vegan shrimp
  • 1 can coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pan over medium heat. Add chopped onion and garlic, sauté until soft.
  2. Add curry powder, turmeric, and cumin. Stir for about 1 minute.
  3. Add diced mangoes and cook for another 2 minutes.
  4. Pour in the coconut milk, bring to a simmer.
  5. Add vegan shrimp, cook for 5-7 minutes until heated through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh cilantro before serving.
