Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Heat olive oil in a large pan over medium heat. Add chopped onion and garlic, sauté until soft.
Add curry powder, turmeric, and cumin. Stir for about 1 minute.
Add diced mangoes and cook for another 2 minutes.
Pour in the coconut milk, bring to a simmer.
Add vegan shrimp, cook for 5-7 minutes until heated through.
Season with salt and pepper to taste.
Garnish with fresh cilantro before serving.
