Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups diced tomatoes
  • 2 cups potatoes, diced
  • 1 cup corn kernels
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in the garlic and cook for another minute.
  4. 4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  5. 5. Add the potatoes, corn, thyme, oregano, salt, and pepper. Reduce heat and simmer for 30 minutes, or until the potatoes are tender.
  6. 6. Stir in the fresh parsley before serving.
