Manhattan Clam Chowder Recipe

Main Ingredients
- 2 tablespoon olive oil
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups diced tomatoes
- 2 cups potatoes, diced
- 1 cup corn kernels
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon fresh parsley, chopped
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
3. Stir in the garlic and cook for another minute.
4. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
5. Add the potatoes, corn, thyme, oregano, salt, and pepper. Reduce heat and simmer for 30 minutes, or until the potatoes are tender.
6. Stir in the fresh parsley before serving.
