Manicotti Shells
- 12 pieces Manicotti Shells
Filling
- 1 cup Vegan Ricotta
- 1 cup Spinach, chopped
- 1 tablespoon Olive Oil
Preheat oven to 375°F (190°C).
Cook manicotti shells according to package instructions. Drain and set aside.
In a mixing bowl, combine vegan ricotta, chopped spinach, and olive oil. Mix well.
Fill each manicotti shell with the ricotta mixture.
Spread a layer of marinara sauce on the bottom of a baking dish.
Place filled manicotti shells in the baking dish. Cover with remaining marinara sauce.
Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes.
Let cool for a few minutes before serving.
