  • 2 cups Carrots, chopped
  • 2 cups Parsnips, chopped
  • 2 cups Sweet Potatoes, chopped
  • 2 tablespoons Olive Oil
  • ¼ cup Maple Syrup
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the chopped carrots, parsnips, and sweet potatoes.
  3. In a small bowl, whisk together the olive oil, maple syrup, salt, and black pepper.
  4. Pour the maple syrup mixture over the vegetables and toss to coat evenly.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the preheated oven for 45 minutes, or until the vegetables are tender and caramelized, stirring halfway through.
