Maple Glazed Root Vegetables

- 2 cups Carrots, chopped
- 2 cups Parsnips, chopped
- 2 cups Sweet Potatoes, chopped
- 2 tablespoons Olive Oil
- ¼ cup Maple Syrup
- 1 teaspoon Salt
- ½ teaspoon Black Pepper
Preheat your oven to 400°F (200°C).
In a large mixing bowl, combine the chopped carrots, parsnips, and sweet potatoes.
In a small bowl, whisk together the olive oil, maple syrup, salt, and black pepper.
Pour the maple syrup mixture over the vegetables and toss to coat evenly.
Spread the vegetables in a single layer on a baking sheet.
Roast in the preheated oven for 45 minutes, or until the vegetables are tender and caramelized, stirring halfway through.
