Ingredients

  • 2 cups Carrots, sliced
  • 2 cups Brussels sprouts, halved
  • 1 cup Butternut squash, cubed
  • 2 tablespoons Olive oil
  • 2 tablespoons Maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the olive oil, maple syrup, Dijon mustard, salt, and black pepper.
  3. Add the carrots, Brussels sprouts, and butternut squash to the bowl and toss to coat.
  4. Spread the vegetables out on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25 minutes, or until the vegetables are tender and caramelized.
  6. Serve warm and enjoy!
