Ingredients

  • 2 cups all-purpose flour
  • cup maple syrup
  • ½ cup chopped pecans
  • ½ cup coconut oil, solid
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup almond milk
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Cut in the solid coconut oil until the mixture resembles coarse crumbs.
  4. Stir in the chopped pecans.
  5. In a separate bowl, mix together the almond milk, maple syrup, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Turn the dough out onto a floured surface and shape into a circle about 1 inch thick. Cut into 8 wedges.
  8. Place the wedges on the prepared baking sheet and bake for 18-20 minutes, or until golden brown.
  9. Allow to cool slightly before serving. Enjoy!
