  • 2 cups Broccoli florets
  • 2 cups Carrot slices
  • 1 cup Bell pepper strips
  • ¼ cup Maple syrup
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine broccoli, carrots, and bell peppers.
  3. Drizzle with olive oil and maple syrup. Season with salt and pepper.
  4. Toss everything until well coated.
  5. Spread the vegetables on a baking sheet in a single layer.
  6. Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized.
  7. Serve warm.
