Ingredients 

Vegetables

  • 1 cup Bell Peppers, chopped
  • 1 cup Zucchini, sliced
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Red Onion, sliced

Marinade

  • 2 tablespoon Olive Oil
  • 2 tablespoon Balsamic Vinegar
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, balsamic vinegar, garlic powder, dried oregano, salt, and black pepper.
  3. Add the chopped bell peppers, sliced zucchini, halved cherry tomatoes, and sliced red onion to the bowl. Toss to coat the vegetables evenly with the marinade.
  4. Spread the marinated vegetables on a baking sheet in a single layer.
  5. Roast in the preheated oven for 10 minutes, or until the vegetables are tender and slightly charred.
  6. Serve warm or at room temperature.
