A refreshing and easy-to-make vegan marinated vegetable salad.

Vegetables
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- ¼ red onion, thinly sliced
Dressing
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
In a large bowl, combine cherry tomatoes, cucumber, bell pepper, and red onion.
In a small bowl, whisk together olive oil, balsamic vinegar, oregano, salt, and pepper.
Pour the dressing over the vegetables and toss to coat.
Let the salad marinate for at least 10 minutes before serving.
