Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions 

  1. In a large bowl, combine olive oil, balsamic vinegar, garlic, salt, and pepper.
  2. Add the sliced vegetables and toss to coat.
  3. Let the veggies marinate for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Grill the veggies for about 10 minutes, turning occasionally, until tender and slightly charred.
