Ingredients 

Tart Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup vegan butter cold and cubed
  • 2 tablespoon sugar
  • 3 tablespoon cold water

Filling

  • 1 cup vegan mascarpone cheese
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh berries for topping

Instructions 

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, sugar, and vegan butter. Mix until crumbly.
  3. Add cold water and mix until dough forms. Press into a tart pan.
  4. Bake for 20 minutes or until golden brown. Let it cool.
  5. In another bowl, mix vegan mascarpone, powdered sugar, and vanilla extract until smooth.
  6. Spread the filling over the cooled crust. Top with fresh berries.
  7. Chill in the fridge for at least 1 hour before serving.
