Ingredients 

Main Ingredients

  • 1 cup Quinoa cooked
  • 1 cup Chickpeas canned, drained and rinsed
  • 1 cup Mixed Vegetables chopped (e.g., bell peppers, cucumbers, tomatoes)
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste

Instructions 

  1. 1. In a mason jar, layer the cooked quinoa at the bottom.
  2. 2. Add a layer of chickpeas over the quinoa.
  3. 3. Add the mixed vegetables on top of the chickpeas.
  4. 4. Drizzle olive oil and lemon juice over the layers.
  5. 5. Season with salt and black pepper to taste.
  6. 6. Seal the mason jar and shake well before eating.
