Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Massaman Curry Paste
  • 1 can Coconut Milk
  • 2 cups Vegetable Broth
  • 2 cups Potatoes, diced
  • 1 cup Carrots, sliced
  • 1 cup Bell Peppers, chopped
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Lime Juice
  • 1 tablespoon Brown Sugar
  • 1 cup Tofu, cubed
  • 1 cup Peanuts, roasted

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add onions, garlic, and ginger. Sauté until fragrant.
  3. Stir in Massaman curry paste and cook for another minute.
  4. Add coconut milk and vegetable broth. Bring to a simmer.
  5. Add potatoes, carrots, and bell peppers. Cook until vegetables are tender.
  6. Stir in soy sauce, lime juice, and brown sugar.
  7. Add tofu and peanuts. Cook for another 5 minutes.
  8. Serve hot with rice.
