Matzo Balls
- 1 cup matzo meal
- ¼ cup vegetable oil
- ¼ cup water
- ¼ cup seltzer water
- 1 teaspoon salt
- ½ teaspoon baking powder
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Soup
- 4 cups vegetable broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 small onion, diced
- Fresh dill for garnish
Mix matzo meal, vegetable oil, water, seltzer water, salt, baking powder, garlic powder, and onion powder in a bowl. Refrigerate for 30 minutes.
Form mixture into balls.
Bring vegetable broth to a boil in a large pot. Add carrots, celery, and onion. Simmer for 10 minutes.
Gently drop matzo balls into the broth. Cover and simmer for 30 minutes.
Garnish with fresh dill before serving.
