Ingredients 

Matzo Balls

  • 1 cup matzo meal
  • ¼ cup vegetable oil
  • ¼ cup water
  • ¼ cup seltzer water
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Soup

  • 4 cups vegetable broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, diced
  • Fresh dill for garnish

Instructions 

  1. Mix matzo meal, vegetable oil, water, seltzer water, salt, baking powder, garlic powder, and onion powder in a bowl. Refrigerate for 30 minutes.
  2. Form mixture into balls.
  3. Bring vegetable broth to a boil in a large pot. Add carrots, celery, and onion. Simmer for 10 minutes.
  4. Gently drop matzo balls into the broth. Cover and simmer for 30 minutes.
  5. Garnish with fresh dill before serving.
